Can’t go wrong with “Fajitas”

Prep: 10 min

2 tsp olive oil

1/2 red or white sliced onion,

1 orange, green, or red bell pepper, sliced

2 minced cloves garlic

2 for those that eat meat a whole chicken breast, grilled and cut into strips, or 8 oz of ground turkey. I personally go for veggies of my choice.

1/2 cup salsa

1/4 cup nonfat sour cream

4 whole wheat tortillas

1 cup shredded low fat mozzarella cheese

1- Heat olive oil in a medium skillet. Add opinion, bell pepper, garlic and sauté for a few. Add meat or veggies of your choice. Reduce heat to medium, and sauté until no longer pink, about 10 minutes.

2- Stir in Salas and chili powder to taste. Sauté for 5 minutes.

3- Spread 1 tablespoon sour cream in a thin layer of each tortilla. Divide the meat and or veggie mixture on top of tortillas, sprinkle each with cheese, wrap, and enjoy.

Enough for 4 servings
